Ingredients:

For the Cake:

  • 3 medium carrots (about 300g to 350g)
  • 3 eggs
  • 1 cup of oil (can replace with melted butter)
  • 2 cups of sugar (tea)
  • 2 ½ cups (tea) of wheat flour
  • 1 tablespoon of baking powder
  • 1 pinch of salt


For the Chocolate Covering (optional):

  • 1 tablespoon of butter
  • 3 tablespoons of chocolate powder
  • 1 cup of milk (tea)
  • 1 cup (tea) sugar
  • 1 tablespoon cornstarch (optional, for more consistency)


Preparation method:

Cake:

1. Preheat the oven to 180°C and grease a medium rectangular pan (approximately 25 x 30 cm) with butter and flour.

2. Prepare the carrots: Wash the carrots well and cut them into small pieces. It is not necessary to peel the carrots, but you can peel them if you prefer.

3. Blend the liquid ingredients: In a blender, place the cut carrots, eggs, oil (or melted butter) and sugar. Beat until the mixture is very homogeneous, for about 2 minutes.

4. Mix the dry ingredients: In a large bowl, sift together the wheat flour, baking powder and salt.

5. Incorporate the liquids into the dry ingredients: Add the liquid mixture from the blender to the dry ingredients and stir gently with a whisk (or wooden spoon) until smooth. The dough will be a little liquid, but that's normal.

6. Bake the cake: Pour the dough into the greased pan and bake for about 35-40 minutes, or until a toothpick inserted into the center comes out clean. Oven time may vary depending on the power of your oven, so be careful.

7. Let it cool: Remove the cake from the oven and let it cool for about 10 minutes before unmolding. Then, remove from the mold and let it cool completely.


Chocolate Covering (optional):

1. Prepare the topping: In a medium saucepan, add the milk, sugar, chocolate milk and butter. Place over medium heat, stirring constantly.
