Ingredients:

For the Cake:

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp cocoa powder (unsweetened)
  • 1 tsp salt
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

1. Prepare the Oven and Pans:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans, or line them with parchment paper.

2. Make the Cake Batter:

  • In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  • In a separate bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until smooth.
  • Gradually add the wet ingredients to the dry ingredients and mix until combined. Be careful not to overmix.
  • Divide the batter evenly between the two prepared cake pans.

3. Bake the Cake:

  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
